SHOE PEG SALAD
1 can shoe peg corn 1teaspoon salt
1 can Le Sueur peas 11/2 teaspoons pepper
1 can green beans 1/2 cup vinegar
1(4-oz.) jar diced pimentos 1/2 cup salad oil
1 bunch chopped green onions 1/2 cup sugar or (Splenda)
1 small green pepper chopped
Drain corn, peas, green beans, and pimentos. Place drained
vegetables in large bowl and add chopped green onions,
chopped green pepper, salt and pepper. Mix together well.
In small pan place vinegar, salad oil, and sugar. Boil together and pour over vegetables. Mix well. Let set in
refrigerator for 24 hours.
