Oven fried catfish for two

 

1/3 cup dry bread crumbs

2T of butter (melted) or olive oil

2- 6oz catfish fillets

 

Preheat oven 450.  Place bread crumbs & oil in separate shallow dishes.  Cut fish crosswise in half.  Season with salt and pepper.  Dip fish into oil then cover with the bread crumbs until coated completely.  Place on baking sheet.  Bake fish until crisp and brown and just cooked through, about 12 minutes.
