Orzo Confetti
Ingredients:
1 lb Orzo Pasta
4 Tbsp Olive Oil
2 Tbsp Green onion, Diced
1 clove Garlic, minced
1/2 cup Red Bell Pepper, diced
1/2 cup Celery, diced
1/2 cup Fresh Mushrooms, diced
1/2 lb Shaved Turkcy Breast, diced
1/2 tsp Cumin
Salt and Freshly Ground Pepper to taste
2 cups Broccoli Florets, steamed (Optional)
Preparation:
In a large skillet, heat 1 tablspoon of the olive oil on medium heat. Add
1/2 cup of uncooked orzo and brown. Cook the remaining pasta with
browned pasta according to package directions. Set aside.
Using the same skillet, heat the remaining 3 tablespoons of olive oil.
Add green onion, garlic, red bell pepper, celery, mushrooms, cumin, salt,
and pepper. Cook until tender
Add cooked pasta and turkey to skillet and toss. Serve hot.
