Garden Chowder

 

 2 med. zucchini, chopped

1 med. onion, chopped

2 T. minced parsley

1 tsp. dried basil

1/3 c butter/marg

1/3 c flour

1 tsp salt

1/4 tsp pepper

2 cans chicken broth

1 tsp lemon juice

1 can 14 oz diced tomatoes, undrained

1 can 12 oz evap. milk

1 pkg 10 oz frozen corn

2 cups shredded cheddar cheese

1/4 c grated parmesan cheese

 

Over medium heat, saute zucchini, onion, parsley & basil in butter until

veggies are tender.  Stir in flour, salt, and pepper.  Gradually stir in

water.  Add bouillon & lemon juice; mix well. Bring to a boil. Cook &

stir for 2 minutes.  Add tomatoes, milk & corn, bring to a boil.  Reduce heat,

cover & simmer for 5 minutes or until corn is tender.  Just before

serving, stir in cheese until melted.
