EASY OVEN-DRIED JERKY

 

For 1 1/2 to 2 pounds lean boneless partially frozen meat.

 

1/2 teaspoon onion power

1 teaspoon hickory smoke-flavored salt

1/4 teaspoon pepper powder

1/4 teaspoon garlic powder

1 tablespoon Worcestershire sauce

1/4 cup soy sauce

 

Cut the meat in to 1/8 to 1/4 inch thick slices (with or across the grain as you wish).  If necessary, cut large slices to make strips about 1 1/2 inches wide and as long as possible.

 

In a bowl, combine all the ingredients and stir until seasonings are dissolved.  Add meat strips and mix thoroughly to coat all surfaces  (meat will absorb most of the liquid).  Let stand 1 hour, then cover and refrigerate over night.

 

Dry on oven rack with oven set on lowest temperature until dry.  Crack oven door while drying meat.
