CHOCOLATE PIE

 

1/2 teaspoon Cinnamon

1/4 teaspoon Salt

1/2 cup Sugar

1/2 cup minus 1 tablespoon flour

1/3 cup Cocoa

 

Mix dry ingredients together.

 

3 cups milk

3 Eggs separated

3 tablespoons Butter

11/2 teaspoon Vanilla

1/4 teaspoon soda

 

Pour 3/4 cup cold milk over sugar-flour mixture, mix well. Heat 2 1/4 cups of milk to scalding.  When milk is hot, pour milk slowly into chocolate mixture stirring constantly.  When thick remove from heat.  Add some of the hot mixture to beaten egg yolks and keep stirring.  Add to hot mixture and beat well.  Cook about 10 minutes longer.  Add 1/4 teaspoon soda while cooking.  Cook until pie filling stops bubbling.  Remove pie filling from heat; add butter and vanilla, mix well.  Pour into baked crust.

 

 MERINGUE

 

Beat 3 EGG WHITES together with 1/4 teaspoon cream of tartar, add 1/4 teaspoon Corn Starch, 1/2 teaspoon vanilla, 1/2 cup plus 1 teaspoon sugar.

Mix well, (the mixture should form peaks) and spread on top of pie.

 

Bake pie(s) for 20 minutes at 350 degrees.
