Apricot Bread

 

1/2  11oz. Pkg. dried apricots

1 c. sugar

2 tbsp. Oleo or shortening

1 egg

1/2 cup orange juice

2 c. flour

1/4 tsp. Soda

1 tsp. Salt

1/2 c. chopped nuts

 

Soak apricots for 30 minutes in warm water to cover; drain, reserving 1/4 cup water. 

Cut apricots with scissors.  Mix sugar, oleo and egg thoroughly; stir in reserve water

and orange juice.  Stir in sifted dry ingredients; blend in nuts and apricots.  Line

bottom of greased loaf pan with paper;  grease paper.  Pour batter into pan; let

stand for 20 minutes. 

Bake in 350 -degree oven for 55 to 65 minutes or until toothpick comes out

clean.  Remove from pan; remove paper immediately.  Cool on rack.

You can double this recipe and make it into small loaves.
